Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1/2 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  • Start by preheating your oven to 350°F (175°C) and lining a muffin tray with paper liners.
  • Gather all your ingredients on the counter for easy access.
  • In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar, stirring until the mixture is well blended.
  • Add the mashed bananas, eggs, and vanilla extract. Mix until smooth.
  • In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are perfectly fine!
  • In a separate bowl, beat the softened cream cheese until smooth. You can add a tablespoon of sugar if you like it sweeter.
  • Gently fold the cream cheese into the muffin batter to create swirls.
  • Spoon the muffin batter into the prepared muffin tins, filling each cup about three-quarters full.
  • Bake in the preheated oven for about 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  • Serve them warm or at room temperature.
