Ingredients

Scale
  • 2 cups warm water (110°F to 115°F)
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1/4 cup granulated sugar
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup baking soda (for boiling solution)
  • 1 egg (beaten, for egg wash)
  • Coarse sea salt (for topping)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk (whole or 2% for best creaminess)
  • 1 cup sharp cheddar cheese (grated)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional for a kick)
  • Salt and pepper to taste

Instructions

  • Begin by gathering all your ingredients and preheating your oven to 450°F (230°C).
  • In a mixing bowl, combine the warm water, yeast, and sugar, stirring gently until dissolved.
  • Let this mixture rest for about 5-10 minutes, or until it becomes frothy.
  • Measure out your flour and salt.
  • Once your yeast mixture is ready, add it to a large mixing bowl along with the flour and salt.
  • Stir until the dough begins to form, then knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  • Divide the dough into bite-sized pieces, rolling each piece into a small ball.
  • In a large pot, bring water to a gentle boil and add the baking soda.
  • Boil each pretzel bite for about 30 seconds.
  • Place them on a greased baking sheet.
  • Brush with the beaten egg and sprinkle coarse sea salt on top.
  • Bake the pretzel bites in the preheated oven for 12-15 minutes, or until golden brown.
  • While they bake, prepare the cheddar sauce: melt the butter in a saucepan, whisk in the flour, and gradually add the milk.
  • Stir continuously until the mixture thickens.
  • Stir in the cheddar cheese and season with garlic powder and cayenne pepper.
  • Serve your pretzel bites warm with the creamy cheddar sauce for dipping.
